This is an easy recipe which can easily be bulked up for a larger family. I used to bake this in the oven but my children just couldn't wait. I had this dish the first time many years ago visiting a distant family member who has since passed.

This is an easy recipe which can easily be bulked up for a larger family. I used to bake this in the oven but my children just couldn't wait. I had this dish the first time many years ago visiting a distant family member who has since passed.

Bring a large pot of water to boil. Cook pasta as per package instructions.

Spray a frying pan with non-stick spray and put on medium high heat. Fry the beef mince until brown.

Add tin of sweetcorn and turn down the heat to very low. This is just to accommodate waiting for the pasta to cook. Stir now and again to avoid sticking.

Add 2 cups of grated cheese to the mince & sweetcorn mix. Stir to combine.

Drain the pasta and add cooked pasta to the mince & sweetcorn mix.

Serve as is if your family just can't wait ;-) Alternatively, bake in the oven for about 30 minutes at 180°C
