My sister asked me to make cookies. I just whipped up something, and it was unexpectedly good.

Baking them thick makes them moist and delicious.
If you find it difficult to handle the dough, add some milk.

If you change the amount of the vegetable oil and milk from 1 tablespoon to 2, these will be crispy when cooked.

Ingredients

12 servings
  1. 50 grams★Rice flour (joshinko)
  2. 15 grams★Cocoa
  3. 1 pinch★Salt
  4. 1/2 tsp★Baking powder
  5. 30 grams★Sugar
  6. 1 tbspVegetable oil
  7. 1 tbspMilk (or soy milk)

Cooking Instructions

    Preheat the oven to 180℃.

    Sift together the ★ ingredients, or mix together very well. Then add the vegetable oil and milk, and mix well into a dough.

    Make into your desired shapes, about 1 cm thick. Doing it by hand might be better than using a mold.

    Bake in the oven for 15 minutes and they're done.

Easy enough, good flavor. Ended up adding another tbsp of milk to a double recipe to get them to come together. Made a baker's dozen of thinner but good-sized cookies. If making any thinner than 1cm, definitely reduce cooking time. Thanks for the recipe. Will definitely be making these again.
