Pancakes stuffed with Coconut Jaggery filling. The perfect delicious and nutritious breakfast for kids and adults of all ages.

In a large bowl, combine flour, sugar, baking powder, baking soda and salt and mix together. Set aside. Whisk egg and butter into the buttermilk and mix together. Add flour mixture and whisk until lump free. Set the batter aside for 10 minutes.

In a small bowl, add freshly grated coconut and powdered jaggery. Mix well and set aside.

Heat a non-stick pan. Apply little butter. Pour 1/4 cup of the batter and cook until bubbles appear on the top ie. about 2 to 3 minutes.

Spread the coconut jaggery filling towards the side and roll the pancake over it.

Roll till the end. Cook the pancake until brown. Remove from pan and cut into two halves.

Continue the process for the rest of the pancakes.

Another way to make it. Apply little butter to the pan. Pour the batter. Spread the coconut jaggery filling over the batter. Pour some more batter on top. Cook until bubbles appear on the top.

Flip and cook on the other side until golden brown. Cut into desired shape.

Continue making pancakes with the remaining batter.

Delicious Coconut Jaggery Stuffed Pancakes are ready. Cut into two halves. Drizzle with honey and top it with colorful sugar sprinklers and enjoy.
