Apple Cake in a Bread Machine

No need to mix this cake! No need to prep a pound cake tin! By using pancake mix, you skip the chore of measuring and sifting flour! I'm really into making simple pound cakes in a bread machine now.
I used my popular apple pie filling to make an apple cake this time.

♥I used a Panasonic Home Bakery bread machine to make this. Your bread machine may differ, so please follow its instructions for baking cakes.
♥By scraping down the flour on the inside of the pan halfway through, the surface of the cake will bake up very nice and evenly. Recipe by Banyangarden

Ingredients

  • 100 gramsUnsalted butter
  • 4 tbspLight brown sugar (or white sugar)
  • 1 tbspMilk
  • 2Beaten eggs
  • 200 gramsPancake mix
  • For the apple filling:
  • 1/2Apple
  • 5 gramsButter
  • 1 tbspLight brown sugar (or white sugar)
  • Topping:
  • 1Whipped cream (optional)

Steps

  1. 1

    Make the apple filling. Cut the apple into 1cm pieces.

  2. 2

    Put the diced apple, sugar and butter in a pan and stir fry.

  3. 3

    When the butter and sugar have melted and everything is mixed well, simmer over low-medium heat until the moisture in the pan is gone, stirring occasionally.

  4. 4

    When the moisture in the pan is gone and the apple pieces are translucent, lightly browned and shiny, the filling is done.

  5. 5

    Prepare the other ingredients. Let the unsalted butter come to room temperature, and cut into small pieces.

  6. 6

    Put the ingredients in the order listed in the bread machine. (Butter → sugar → milk → eggs → pancake mix → apple filling.)

  7. 7

    Choose the "cake" setting, and press the Start button.

  8. 8

    When the machine beeps, open the lid and scrape down the sides of the bread pan. Press the Start button again.

  9. 9

    Take the cake out of the bread pan as soon as it's done. Cool on a rack and it's done!!

    I used pancake mix with vanilla essence in it.

Made the bread machine apple cake. Disaster! Only 2cm high. No rise at all and under cooked inside. Followed the recipe but it must be my old Russell Hobbs machine.
