Pink colour beetroot mashed potatoes 💗💗💗

Steps

Peel the potatoes and start cooking them in the cold water. This is a tip to cook the potatoes evenly.

Although I bought cooked beetroots, I cooked them in the boiling water for few minutes to make them softer.

Once the potatoes are cooked, drain the water with a strainer.

Place the cooked potatoes in a big bowl and add butter. Use a potato masher to mash them until they become soft and creamy. Add beetroots and mash again. Sprinkle salt and pepper.

Add mayonnaise. I added 3 table spoons, but please adjust to suit your taste. Garnish some parser leaves on the top!
