Steps

Wash and soak rice overnight. Drain water and grind the rice with fresh coconut chunks with very little water to smooth paste.

Divide the batter into 3 bowls in equal parts.

Soak dry chilli in hot water for 30 minutes. Grind Soaked red chili, garlic, chana dal and onion to smooth paste. Mix with one part the orange colour is ready.

Grind spinach, green chili and ginger to smooth paste. The green colour is ready. Mix with another batch of the batter.

Heat a non-stick pan. Pour orange batter to ⅓ pan, followed by white batter and then the green batter on medium high flame. Cover and cook. When the dosa leaves the sides of the pan, remove and serve hot with the chutney of your choice.
I served with masala kala chana.
