Red pumpkin is full of nutrients and vitamins. It's packed with Vitamin A and more antioxidants necessary for our body.
My mom makes this curry in a different way, including potato, coconut powder and some dry masalas. She never used onion and garlic. But one can use them. Without onion and garlic, the curry taste awesome. The preparation is simple but the taste is superb. This dry curry goes well with poori/steamed rice and daal.

Heat ghee and oil in a wok. Add cumin seeds and allow to crackle. Add the whole garam masala and saute till aromatic.

Mix the coconut powder and saute on low heat.

Now add and mix dry masala from turmeric powder to kashmiri red chilli powder. Mix well.

Slow down the flame, cover and cook the dry pumpkin curry, till done. Serve with paratha, poori or steamed rice.
