Gobi-Paneer Kadai
Steps

Firstly add 1 tbsp of butter in a pan and stir-fry the paneer pieces for about a min or two. Then remove them from the pan and keep them dipped into the water as shown below.

Now in the same pan add 2 tsp of oil and stir-fry the capsicum and onion cubes for about 2 mins. Remove them and keep them aside. Now in the same pan add some more oil & stir-fry the cauliflower pieces for about 5 mins. Keep them aside too.

Now add 2 tbsp of butter and 2 tbsp of oil in the same pan; mix it then for tempering, add all the khada masalas mentioned above including jeera, green cardamom, black cardamom, 1 to 2 cinnamon sticks, chakra phool, a bay leaf and 1 to 2 dried red chillies. Let them splutter for a while.

Then add grated onion and mix it. Fry it for about a minute then add ginger-garlic paste into it. Mix it too and cook it on a low flame for 2 to 3 mins.

Then add all the dried masalas in it like turmeric powder, corriender powder, red chilli powder, salt & some sugar. Mix everything well and cook it further for 2 to 3 mins.

Then add the grated tomatoes into it and mix it. Now combine the masala well and let the it cook on a low flame until oil starts releasing from the masalas.

Now add the stir-fried cauliflower into it and give it a good mix so that the masalas gets well coated with the cauliflower. Now add some warm water into it. Add some salt and mix it. Now cover the pan and let it cook until the cauliflower pieces are nearly cooked.

Once the cauliflower gets cooked, add the stir-fried capsicum and onion cubes into it. (which you have kept aside; in step 2) Mix them well. Let it cook for 2 to 3 mins.

Then add some crushed kasuri methi in it and mix it. Now add the paneer pieces into it and gently mix everything well. Now cook for 2 more mins. Check the salt and sugar.

Finally add some chopped corriender and give it a final mix. Your gobi-paneer kadai is now ready to serve. Serve it hot with naan or tandoori roti. I have served it with some hot & crunchy parathas.
