Ingredients

  1. 12 OzBacon (Chopped)
  2. 1 lbGround Pork Sausage
  3. 1Medium Onion (Diced)
  4. 4-6Garlic Cloves (Minced)
  5. 4Medium Russet Potatoes (Diced)
  6. 4 CupsChicken Broth
  7. 2 CupsHeavy Whipping Cream
  8. 2 CupsSpinach Leaves (Chopped)

Cooking Instructions

  1. 1

    Chop bacon up and saute in a large pot. I used a dutch oven. Remove bacon from pot and place on paper towels to absorb grease. Keep bacon drippings in pot.

    Add sausage to pot with bacon drippings and cook until there is zero pink.

    Once sausage is cooked, increase to high heat for 5 min and stir every min for a slightly caramelized effect. This will also reduce your sausage & bacon drippings.

    Remove ground sausage and place on paper towels to absorb grease.

    Add garlic and onions to drippings and saute until soft. Add diced potatoes and toss to coat. Add salt and pepper for flavor until your ancestors say that it's enough. Saute for 5 min on high and toss every 30 seconds.

    Add chicken broth to pot and boil potatoes until fork tender.

    Add sausage & bacon. Bring to boil.

    Add Spinach and cook until leaves haves wilted.

    Once leaves have wilted, add cream. Cook until heated. Serve with bread.

    Goes great with garlic bread!!
