Pumpkin is one of my favourite vegetables and I love this simple curry which is so nutritious and wholesome. It's prepared in Maharashtrian style and tastes good with chapati or " poli" as we call it or steamed rice or " bhaat" as we say. Pumpkin is rich is with vitamin A, C and fiber, along with natural sugars and water content.

Ingredients

25 minutes
3 servings
  1. 2 cupsFresh pumpkin cut in triangle shapes (with skin)
    Pumpkin Sambar
  2. 2 tablespoonsCooking oil
  3. 1 tspMustard
  4. 1 tspCumin seeds
  5. 1/2 tspMethi (Fenugreek) seeds
  6. 1/4 tspHing/ asafoetida
  7. 10Curry leaves
  8. 2Chopped green chillies
  9. 1Dry red chilli broken
  10. 1 tspChopped garlic
  11. 1 tspChopped ginger
  12. 1/2 tablespoonPoppy seeds
  13. 1 TablespoonGroundnut powder
    Street Style Dhabeli (Sweet Potato stuffing)
  14. 1/2 tspChilli powder
  15. 1 tspTurmeric powder
  16. 1 tspGaram masala powder
  17. 1/2 tspSaunf powder
  18. 1 tspAamchur powder or tamarind pulp
  19. 1 tspJaggery Powder
  20. to tasteSalt
  21. as neededHot water for gravy
  22. as required Chopped coriander leaves to garnish
  23. as required Steamed rice to serve

Steps

25 minutes
  1. 1

    First, heat oil in a pan. Add mustard and Cumin seeds. Let them pop up. Then add methi seeds and let them release aroma.

    Add hing and Curry leaves. Saute for half a minute. Then add ginger, garlic, chillies and stir cook for a half a minute.

    Then add turmeric powder, and pumpkin pieces. Stir and mix well for a minute. Then add 1 /2 cup hot water, cover and cook till pumpkin turns soft. Keep checking in between.

    Light roast groundnut powder, poppy seeds and saunf powder for 2 minutes on low flame. Then add to the curry. Mix well.

    Add rest of the masala, aamchur or tamarind pulp, jaggery, salt and mix nicely. Add more hot water as per gravy consistency needed and stir well.

    Cook covered for 5 minutes. Then switch off flame and pour in serving bowl. Garnish with chopped coriander leaves. Serve steaming hot with steamed rice or chapati. Enjoy yummylicious pumpkin curry!
