Wheat dalia khichri with winter vegetables

Winter is a season of colorful vegetables. Most of us love to cook and serve colorful dishes with innovations and surprise family and friends. I have selected khichri, an all seasons favorite, using wheat dalia, moong dal and few vegetables. This recipe is healthy and can be tried easily by all.

Winter is a season of colorful vegetables. Most of us love to cook and serve colorful dishes with innovations and surprise family and friends. I have selected khichri, an all seasons favorite, using wheat dalia, moong dal and few vegetables. This recipe is healthy and can be tried easily by all.

Soak the moong dal in water for 2 hrs. Rinse thoroughly with water several times. Discard the water.

In a kadhai, add oil and switch on the burner. When the oil is hot, add cumin seed and allow it to flutter. Add wheat dalia and fry till golden brown.

Transfer dalia in a pressure cooker. Add washed moong dal and water. Add salt, turmeric powder and chili powder and cover with lid. Cook in low flame till whistle blows once. Switch off the burner and let it cool down to room temperature.

For preparation of vegetables, cut all of them in dice shapes. Take a kadhai. Add oil and heat it. Add cumin seed and allow it to flutter. Add potato, turnip and carrot and cook in low flame with salt. During cooking, cover the kadhai with lid and stir occasionally. Once the vegetables become soft, add capsicum and saute for 2mins. Switch off the burner. Add chat masala powder and allow it to cool.

Now khichri and curry are arranged in a plate and decorated with rest of the vegetables like cucumber, tomato, beet, onion, green chili, green peas and coriander leaves.
