Steps

Slit the brinjal on each side using knife at multiple places using a fork.Apply some oil on brinjal over the surface.Place it on a burner & roast it on direct flame on a medium flame.

When the outer skin is black & starts to separate from inner layer turn it to another side.When brinjal becames soft ;turn off the flame.

Let it cool for 10 mins.peel the charred skin.

Mash the brinjal using spatula or cut it into small pieces.

Heat oil in a pan over medium flame.Add chopped onion & saute until little brown.Add crushed ginger garlic,green onion,chopped green chillies.Saute for a minute.

Add chopped tomatoes & salt & cook until tomatoes became soft.Add turmeric & red chilli powder mix well

Add mashed brinjal & salt.Mix well & cook for 5 to 6 mins.

Turn off the flame & garnish with Coriander leaves & malai on top.Baingan ka bharta is ready to serve.
