Rinse the rice and let it soak for 25 minutes.

In a pot, bring 3 cups water (about 700 ml) to a boil. Add the cloves, green cardamom, and yellow food coloring.

Once the water boils, add the soaked rice and mix. When the rice is about 70% cooked, drain and let it cool.

In a pan, heat 2 tablespoons ghee and roast the dry fruits until golden.

Add the yellow rice, mix well, then add the saffron milk and sugar. Mix again. Add 1 more tablespoon ghee, stir, cover, and cook for 2-3 minutes.

Serve the hot kesari sweet pulao topped with more dry fruits.
