This recipe came about when I didn't know what to make, so I checked what was in the fridge and this is what I came up with.

These are the tortilla chips I used.

The cheese I used is this brand, but there are many others you can choose from.

First, heat a little oil in a skillet and add some diced onion. Once the onion is golden, add the drained beans and fry until they dry out a bit.

In a microwave-safe bowl, add some cheese and heat in 30-second intervals until hot, but not burned.

Put the diced tomatoes in a separate bowl.

Place the diced onion in another bowl.

In another bowl, add pickled jalapeños.

On a plate, add some tortilla chips, then top with beans, onion, tomato, cheese, and finally the pickled jalapeños. Enjoy!
You can adjust the amounts based on how much you like on your nachos.
