Beef bone broth with noodles

I got a kilo of quality beef bones from the butchers for £2 so I decided to make them into a delicious broth.
It made the kitchen smell so delicious. I then sieved it and shredded the remaining meat off the bones - there was quite a lot which goes to show how far you can stretch a couple of quid.
Next day, I turned it into this very quick, delicious and nourishing soup.
You could also freeze the broth to use when you need it or keep it in the fridge for a few days. The leftover beef fat is also great for roasting potatoes. I felt so happy that these butcher's bones, which would have gone in the bin, have been used for so many meals!

To make the broth, add all the ingredients to a large saucepan and cover with water.

Bring to the boil, skim off any scum from the surface. Then reduce the heat, cover and simmer over a low heat for anywhere between 6-8 hours or as long as you can until you get a fragrant delicious liquid.

Sieve it into another large pan, bowl or jug, squeezing out as much of the delicious broth with the back of a spoon.
You may still have meat on the bones so pick all of this off and save it for your soup or to eat another time.

Leave the broth to cool, then skim off the fat. You can use the fat to roast potatoes!

Store your broth in a container for up to 3 days or use straightaway...

To make a quick soup, peel and finely slice the onion, ginger and garlic. And finely slice the chilli.

Cook slowly until onion is softened in a large pan with a good splash of vegetable oil.

Add the bone broth and bring to a boil. Reduce heat to a simmer. Taste and season with fish sauce and soy sauce.

Chop the greens if necessary, then stir into the pan and cook until tender. Stir in any leftover meat to heat through.

Meanwhile, prepare your toppings.

Season soup to taste with soy sauce and lemon juice.

Ladle into bowls and bring everything to the table with the toppings so everyone can help themselves.
