Sicilian sfinci are a traditional sweet treat enjoyed during Carnival. These fluffy fritters are made with flour, water, yeast, and golden raisins.

Make the dough. In a large bowl or pot, combine the flour, yeast, salt, golden raisins, and a little of the water. Start mixing vigorously by hand, gradually adding the rest of the water. Continue kneading for about 10 minutes until you have a very elastic and sticky dough. Cover with a damp kitchen towel and let rise for 2 hours in a turned-off, slightly warm oven.

After rising, the dough should have doubled in size.

Heat the sunflower oil in a pot until it reaches frying temperature (test by dipping a wooden stick—if small bubbles form, the oil is ready).

To make the fritters, dip a tablespoon in cold water, scoop up some dough, and drop it into the hot oil. Fry the fritters for about 3–4 minutes. Repeat until all the dough is used.

Sprinkle the fritters with granulated sugar. Variation: Warm a few tablespoons of honey in a small saucepan and dip the fritters in the honey after frying!
