Chickpea & Veggie Soup with Ditalini

This recipe is adapted from a soup recipe that I found on the back of a Kroger's box of ditalini pasta! 👏😊 This is like a ham & bean soup meets vegetable noodle soup.🤷🏻‍♀️ Or a distant cousin of "pasta e fagioli" (pasta with beans) or "pasta e ceci" (pasta with chickpeas.) 😎👌 I loosely followed the box recipe, though I adjusted some measurements & substituted, as well as, added some ingredients. Ingredients

35-45 mins
4-6 servings
  1. 1 1/2 cup"Ditalini" pasta noodles
  2. 4-6 slicesbacon or ham, diced
  3. 1 tbspolive oil
  4. 1 cupred onion, chopped
  5. 1 cupgreen onion, chopped
  6. 1 cupcelery, chopped
  7. 1 cupcarrot, chopped
  8. 1 cupzucchini, chopped
  9. 1 cupcabbage, chopped
  10. 2 tspgarlic, chopped
  11. 14.5 ozcan diced tomatoes
  12. 4 cupschicken bone broth
  13. 4 cupswater
  14. 1 canchickpeas
  15. 1 tbspparsley, chopped
  16. 1 tspbasil, chopped
  17. 1 tspthyme
  18. 1 tspsalt
  19. 1 tsppepper
  20. 1 tspdried oregano
  21. 1 tspcrushed red pepper

Cooking Instructions

35-45 mins
  1. 1

    First, heat a soup pot over medium heat & begin to saute bacon and/or ham for about 6 minutes or until crisp. Pour off all but 1 tbsp of the bacon fat. Then, add oil and onions & saute until softened.

    Next, add carrots, celery, & zucchini. Saute until softened.

    Next, add garlic, crushed red pepper, & cabbage. Saute for 1-2 minutes more.

    Then, add chicken broth & tomatoes. Bring to a simmer.

    Now, drain & rinse chickpeas. Mash half of the chickpeas into a rough paste with a fork & add to soup along with whole chickpeas, oregano, thyme, basil, & ditalini pasta.

    Stir & simmer uncovered for 10 minutes until pasta is al dente. Season with salt, pepper, and serve sprinkled with parsley.
