💚 Bánh Bò Bông Sữa Dừa (Vegetarian)

Making these marathon-style... :)) Luckily, my family has a lot of snack lovers (including me), so we help each other out by sharing the treats. This Bánh Bò Bông recipe is based on chef @toha_2591227's method. It's soft and fragrant with coconut milk, and very delicious. However, since my family doesn't like things too sweet, I used half the amount of sugar and replaced the other half with Stevia. If you prefer it sweeter, you can double the sugar as in the chef's original recipe.

Mix the coconut milk, milk, and sugar until the sugar dissolves. Add both flours and baking powder, then mix well with a whisk or spatula until smooth.

If using whole grain rice flour, the batter may be a bit dry, so add an extra 4 teaspoons (20 ml) of milk. If using regular rice flour and the batter is already the right consistency, you don't need to add more milk. Lightly grease the molds with oil, fill them with batter, and place them in a steamer basket.

Bring water to a boil, then place the steamer basket over the pot and steam for 20 minutes.

After 20 minutes, remove the cakes and let them cool before serving.

Since the molds are greased, the cakes will release easily when inverted.
