Ingredients

Under 1 hour
2 people, 4 pancakes
  • 2medium potatoes, skin on
  • 3 ozsauteed and chopped spinach or swiss chard, kale or cabbage leaves
  • Cupbuttermilk (fresh, or 1 Tbs buttermilk powder-amazon)
  • 1/2 cupall purpose flour
  • tspbaking powder
  • 3 ozgrated mozarella, cheddar, or other mild cheese (no added salt needed)
  • Tbschopped cilantro
  • Tbschopped parsley
  • TspGround green peppercorns
  • 2 Tbsolive oil
  • Cost: $1 for two, per person 50 cents per breakfast
  • Equipment: a large, 12” cast iron skillet works best for 4 good size pancakes at once

    Dice potatoes, cover in boiling water, boil ten minutes, drain, dry in warm pan. Add sauteed chopped greens, mash smooth. Add 1/2 cup all purpose flour, tsp baking powder, cup of buttermilk, mash till smooth thick batter. Stir in freshly ground green pepper, grated cheese, cilantro, parsley.

    Heat large skillet, add 2 Tbs olive oil, ladle in batter to make one full pan potato pancake, fry till top is dry and little puffs form. Lift side of pancake, check to see if golden and crusty. Then, cut in 4 slices, flip, fry on other side. Garnish with wedge of lemon, slice of cucumber. Serve, enjoy.
