Ingredients

  • Shredded cheddar or favorite cheese
  • Sliced dill pickles

    Preheat oven to 400 degrees F.

  2. 2

    Spray a tiny bit of oil on the bottom of a mini muffin pan.

  3. 3

    Lay out paper towels and drain pickle slices so they are dry. As they drain sprinkle shredded cheese on the bottom of each cup.

  4. 4

    Next, lay the pickles on the cheese. Finally sprinkle cheese over the top. Bake for around 15 minutes.

  5. 5

    Pull out and let it cool for a couple of minutes. I took a butter knife and gently popped out the crisps on paper towels to drain off grease.

  6. 6

    Served with spicy ranch.

  7. 7

    Notes- I wiped around each cup so that the rims would not burn.
    * I used jar pickles that were thin. To get more pickle taste, I want to try a thicker sliced pickle. Maybe even bread and butter pickles.

I won't share the cooksnap today, as mine don't look very pretty. I think I should change my type of cheese and try the muffin pan. The flavor is there, just not the crispness. Hope to try this again soon!
