The outer layer of the samosa is crunchy, and inside, it's stuffed with a mixture of potatoes and peas, then deep-fried. Cooking Instructions

To make samosas, first sift the all-purpose flour in a large bowl, then add carom seeds and shortening as needed.

Gradually add water to the flour and knead into a semi-soft dough. Let it rest for 20 minutes to set.

While the dough is setting, prepare the samosa filling. Mash the potatoes, then heat oil in a pan. Once the oil is hot, add asafoetida, green chilies, and ginger.

Add green peas and cook until slightly tender, then add the mashed potatoes and sauté for 2 to 3 minutes.

Add all the mentioned spices and salt. Sauté the potato and pea mixture for 2 to 3 minutes. Finally, mix in the finely chopped cilantro.

Divide the dough into equal portions, then roll each into an oval shape, as thick as a tortilla. Cut it into two equal parts.

Leave one part plain and cut the other part into thin strips, leaving the edges intact. Brush water on it, then stick the plain part over it.

Form a cone shape like a regular samosa, then fill with 1 1/2 tablespoons of the potato and pea mixture.

Prepare all the layered samosas in this way. The other side of the samosa will have a wavy design. Place your preferred design on the front.

Heat oil on medium heat, then fry the samosas on low heat. It's essential to fry on low heat; otherwise, the samosas will remain raw inside.

Serve the patti samosas with your favorite chutney or sauce.
