Samosa is world famous indian appetizer that has delicious potato stuffing rolled into crunchy pastry filling. This recipe is surely a keeper. If you make Samosa step by step it is very easy process. Truly true labor of love for sure. Let's get started....
Cooking Instructions

In a pan add oil and once it turns hot, add Cumin & Coriander seeds. Once it gets aromatic and toasted add hing, chopped ginger and spicy chilies. Sauté for 2 minutes.

Add green peas along with salt to taste and mix well.

Add turmeric, red chili, garam masala and cumin powder & mix well. Add anardana and red chili flakes and mix.

Add chopped coriander and mix well. Let it cool down completely.

For dough you need to take one mixing bowl add all purpose flour, salt to taste along with carom seeds and mix well.

Add oil & ghee and rub it well. add enough oil+ghee - when you bind it should hold a shape. Add very little water in batches & knead a little stiff dough. Do not over knead. Cover and give it a rest for 10 minutes.

After 10 minutes divide dough into equal portions and make uniform sized balls.Cover them all.

Now take one ball and flatten it. Roll it into round shapes and fold into half to make an exact mark to cut & cut in the center using pizza cutter to make two parts. Repeat the process for all of them and store in airtight container.

In a bowl add plain flour and water and make a slurry. Take one half and roll little thinner. Apply slurry on all the edges and seal join the edges to make a cone shape. Now add prepared samosa stuffing in the center and seal all the edges. Please watch my video on Instagram to see how to assemble samosa.

Once you assemble make sure you keep putting them in air tight container. Once you are are done with all of them heat the oil in frying pan and fry on low-medium heat until golden brown from both sides. Enjoy with chai, coffee or chutney.
