I really like liver and I'm always looking for different ways to prepare it.

Measure and cut all the ingredients for the recipe. Pat the liver dry with paper towels. Use a knife to remove any thin membrane and veins. Cut the liver into strips.

Heat a skillet with the oil and fry the liver on both sides. Add the onion and garlic, and sauté for 1 minute. Add the celery and bell peppers, and sauté until just tender but still crisp. Stir in half of the cilantro. Season with salt and pepper to taste.

You can serve this with rice if you like.
