Papdi Chaat

However, out of all chaats, crispy flat puris (papdis) topped with potato, chickpeas, moong beans, onion, flavored with green chutney, sweet chutney, curd and crispy sev otherwise known as papdi chhat is best. It has a perfect combination of crunch and mouth-watering flavor of chutneys complimented by goodness of boiled potatoes, chickpeas and sprouted moongs, making it a perfect party snack. Prepare all raw materials in advance and allow your guests to assemble it themselves to their liking.

First mash the boiled potatoes, add cumin powder and salt and mix. Now in a large bowl, add all purpose flour (maida), rava and wheat flour, add as much ghee as you can and mix the flour well.

Now add salt and half crushed black pepper seeds and mix well. And make a handful of flour by hand.

Then add a little bit of water and make a little medium dough. Cover this dough with a lid and let it rest for 10 minutes. Then after resting, knead the dough again for one minute and make it into big loaves.

Now weave a large medium size loaf from this loaf, make holes in it with a fork and cut it into small pieces with a round cutter. Make all the papdi Puri in this way.

Now heat oil on medium gas flame in a pan, add papdi puri and fry on slow to medium gas flame till golden colour. Fry all the papdi in this way.

Now let's assemble this papadi chaat. Arrange the papdi in a serving plate and add the boiled potato pieces, finely chopped green chillies, finely chopped onion and finely chopped tomatoes.

Now top up add sweet curd, mint coriander green chutney, date tamarind chutney, chaat masala, red chilly powder, black salt powder, roasted cumin powder, masala shing, masala bundi, nylon sev, pomegranate seeds and add finely chopped green coriander leaves and serve it.
