Cooking Instructions

Preheat your oven to 350° Add your butter into a skillet or any oven safe dish. A cast iron skillet would be prefect here.

Once your butter is melted add in diced or chopped carrots and celery (onion is optional) now add in salt and pepper to taste as well as some fresh thyme

As the carrots and celery are simmering add in chopped potatoes and cauliflower

Now add in your flour, milk, and vegetable or chicken stock. (As well as optional Dijon mustard) You should see a nice thick gravy forming (I put 3 tbsp because I wanted it extra thick)

Turn off the heat and add in your peas, chicken, and parsley. Stir it up until everythings combined

At this point you can either make your biscuits or use store bought and put them uncooked in your oven safe skillet
- 7
Shove your uncovered skillet into your 350° oven for about 12-15 minutes or until your biscuits are golden

Gluten and I are on the outs! Dairy and I have been foes for quite some time. Soy punches me in the gut and runs away laughing! I really try to break it off with all of these guys and never look back, but...I always seem to crawl my way into their grasp again!With that said, when I am weak, I try to make GF/DF/SF as easy to incorporate into my family's life, so I don't feel so alone in my journey. This recipe sounded like a winner, but had two of my ex's lingering quite heavy. So, I decided to make them unnecessary. I left butter in, just because it is such a worthy dairy product! This kind of recipe doesn't scream "hey don't try me, I'm Gluten-Free, Dairy Free and blah!"The recipe was tweaked by me and can be tweaked very easily to suit your health/taste choices!Thanks for checking my recipe! Save time by using rotisserie chicken and frozen pie crust. They will still love you. You can add any vegetables you like I had leftover garden green beans and corn and no peas and used those scaling back on my other vegetables. cindybear -
