Khubani ka Meetha

Khubani ka meetha (Khubani means apricot) is a very popular traditional dessert of stewed dried apricots all golden and moist and scrumptious and garnished with slivers of crunchy almonds and topped with a dollop of thick cream, ice cream or custard. It is sweet yet tangy in taste. It occupied pride of place in shahi dastarkhwans, or ceremonial royal feasts, and even today this luscious apricot compote is a perfect end to a rich and heavy Mughlai meal.
Just five ingredients are combined to create this delectable dessert-dried apricots, sugar, lime juice, almonds, and cream.

Chop the sun dried apricots and place in a pan along with water, sugar and lemon juice.

Cook over medium heat, till sugar dissolves and the mixture becomes pulpy and blended.

Transfer into a serving dish, and garnish with toasted almond slivers. Serve hot or cold accompanied by cream/
ice-cream/custard.
