Dough should not be too soft.while rolling the dough cut the circles in about 1-2 mm like phulka.if it is thin than puri will not puff up & if it is thick it will not be crispy after frying.do not over crowd the oil with puris. While frying press the puri with spatula to puff up.let them puff fully only then turn the side.

To make puri.mix all ingredients in bowl.add water in small amount & bind in dough which should not be soft yey slightly stiff.cover the dough under wet towel for least 30 min.knead again in smooth dough.roll out the dough and cut circles out of it with thickness like phulka or chapati.deep fry in hot oil at medium flame.

Follow the linked recipe for khatta pani,chutney and boil chickpeas.mix together chickpeas potato chaat masala onion coriander.

Serve pani puri by assembling condiments. Make a hole in puri,fillup with chickpeas masala. Add chutney on top, dip in khatta pani and enjoy 😋😋
