  1. 2 1/2 cupsall-purpose flour (about 300 grams)
  2. 1 2/3 cupsbread flour (about 200 grams)
  3. 1 1/4 cupswater (300 ml)
  4. 1 1/2 tablespoonsolive oil (20 ml)
  5. 1 tablespoonhoney
  6. 2 teaspoonssugar
  7. 1 1/2 teaspoonsinstant dry yeast (5 grams)

    In a stand mixer, add the sifted all-purpose and bread flours, yeast, and honey. Start mixing and slowly pour in about three-quarters of the water.
