Cooking Instructions

In a stand mixer, add the sifted all-purpose and bread flours, yeast, and honey. Start mixing and slowly pour in about three-quarters of the water.

Once the dough starts to come together, add the salt, the remaining water, and the olive oil in a slow stream.

When the dough is well combined, transfer it to a floured surface and fold it several times to strengthen. Place the dough in a bowl and let it rise until doubled in size, about 2 hours.

Spread the dough onto a greased baking sheet, stretching it out evenly. Cut the cherry tomatoes in half and press them into the dough. Drizzle with a little olive oil and sprinkle with oregano. Let rise for 30 minutes at room temperature.

Bake in a preheated oven at 375°F (190°C) for about 45 minutes.

Firstly they give a nice colour and look to the bread, somehow making it more tempting and secondly I love how it tastes after baking. I know Focaccia calls for a generous amount of olive oil added to the dough and the topping as well, but the end results are awesome. Olive oil infused with garlic and herbs takes the bread to an another level. Although I have used dried herbs in my recipe but you can use fresh herbs depending on the availability.
