I'm almost embarrassed to post this recipe, it is so simple. To me, however, it is the the ultimate comfort food when I am feeling blue. Mom never served this with "real" Parmesan cheese. In fact, I never knew that Parmesan cheese came from anything except the green Kraft can until I was an adult!

Ingredients

1 hr 30 min
6-10 servings
  1. 1 poundground beef
  2. 1onion, finely chopped
  3. 1 tablespoonolive oil
  4. 1and 1/2 cups macaroni
  5. 1 (28 ounce)can stewed tomatoes (Italian preferred)
  6. Freshly grated parmesan cheese (optional)
  7. Salt and pepper

Cooking Instructions

    Cook macaroni until firm, but done. Drain and rinse with cool water.

    Sauté onion in olive oil until golden, add ground beef and fry until done. Drain off fat.

    Add tomatoes; chop them up if the pieces are too large. Bring to slow boil, and simmer for 10 minutes.

    Add cooked macaroni. Salt and pepper to taste. Bring to slow boil and shut off heat. Keep pan covered to let macaroni absorb the liquid.

    I like eating this lukewarm with a healthy handful of freshly grated parmesan cheese.

    Note: You can jazz this up by adding some minced garlic with the onion or adding a teaspoon of dried Italian herbs or sprinkle a tablespoon of finely chopped Italian parsley on top before serving.

I am a retired school library media specialist living in southern Indiana. I spent a number of years working in schools around the world and have lived in Germany, Turkey, Saudi Arabia, and Japan. My last creation based on a book was a “Waves of the Danube” cake which was mentioned in "People of the Book" by Geraldine Brooks. It was absolutely decadent and delicious. I have always been in love with cooking and pie baking comes easy to me. I find that baking soothes me in times of stress. The first time I bake something I always follow the recipe exactly to see how it turns out. Afterwards, I will analyze it and make changes if I feel that the recipe could use some tweaking before I make it again. My cooking skills come from my Polish American family roots in Detroit, Michigan and its suburbs.
