Rice with Bhindi (Okra)  Stir fry

When I walk into a kitchen I would like to smell the aroma of masala powder, not oil. Deep frying in my opinion is not a good technique especially when you use the same oil again and again. You can easily make a crispy almost green okra when you follow the my recipe. The mucilage in okra makes it mushy. But you can easily get rid of it by keeping thinly sliced okra in the sun just for an hour or two . There is no dearth for hot sun in India. You can also microwave okra for 4 minutes to get rid of the mucilage.

Ingredients

  • 3 tbspoil
  • 6 cokra chopped (thinly sliced)
  • 1 tspmustard seeds
  • 1 tspcumin seeds
  • 1/2 tspasafoetida
  • 1 tbspurud
  • 3green chilies, sliced
  • 1/2curry leaves
  • 1/2 teaspoongrated ginger
  • 1/4 teaspoonground turmeric
  • 1 teaspoonmasala powder
  • as per tasteSalt
  • Masala powder:
  • 2 tbspcoriander seeds
  • 1 tspblack pepper
  • 1 tbspcumin seeds
  • 2dried red chilies
  • as per tasteSalt

    Make a check list. keep the required ingredients within reach
    Masala powder: Masala Powder: dry roast the ingredients in a sauce pan over medium low heat until aromatic. Turn off the heat, cool, grind the roasted ingredients in coffee blender or in any blender of your choice

    PREPARING THE okra for stir fry: wash, strain, dry it in a towel to get rid of the moisture. With a sharp knife slice thinly. Take the slices in a bowl, mix with salt,, spread as ome layer on a plate. Leave under the sun for an hour. Alternatively you can microwave for 4-5 minutes. you got rid of the gooeyness

    In a medium (12-inch) frying pan or wok, heat oil over medium-high for 30 to 45 seconds pop mustard seeds, cumin seeds; let it splatter. Add Urud, fry aromatic. 1 minute. Stir in ginger, asafoetida, turmeric powder, green chilies, and curry leaves,1 min. Add okra and cook undisturbed for 5 minutes or until okra starts to brown a little around the edges. Add the masala powder. Cook until crispy, Just flip them, handle gently. taste. Add salt if you need. Crispy okra will be ready in 5-8 mins.

    Serve the stir fried okra as side dish or mix with rice and ghee. Simply divine. Enjoy
