Ingredients

60 @ 90g
  • 2870 gStrong Flour
  • 140 gSugar
  • 70 gSalt
  • 26 gYeast
  • 240 gButter
  • 6Eggs
  • 140 gPotato Flakes (hydrate with 540g boiling water)
  • 140 gMilk Powder
  • 1200 gWalm Water

Steps

  1. 1

    Mix all ingredients togther cover and allow prove for 1 hour

  2. 2

    Punch and fold the dough and allow to prove for a further 1 hour

  3. 3

    Scale off into buns and mould

  4. 4

    Allow to prove until double in size

  5. 5

    Bake in over at 175oC for 15 minutes
