Rigatoni with Vegan "Walnut Mushroom Meat" Sauce

This recipe was adapted from a recipe for #spaghettibolognese that I found on the website "WhatTheHeckDoIEatNow.com" which I have found to be a valuable resource. I always wondered how vegans made "meats" for recipes. I havent eaten pork in years. I've always been somewhat of a vegetarian my whole life already. However, Since I've recently started exploring the world of being #vegan one of the main foods that I've wanted to cut out is ground beef. Being raised Italian on a diet that consisted of alot of ground meats, being now "turned off" by them made me miss alot of traditional & regular recipes in my life. This #veganswap changed my life. You can use this as a meat alternative in things like pasta dishes, mexican dishes, & more! #vegandinnerideas #veganmeatsauce

Rigatoni with Homemade Meat Sauce Rigatoni with Homemade Meat Sauce
I love to use rigatoni with meat sauce because it picks up the sauce so well! Also, I like to change my sauce ingredients depending on what I have around at the time, and what I'm in the mood for, as far as vegetables & toppings go. One thing I almost always add to my sauce is the brown sugar. The kids and I both enjoy the sweetness in the sauce. You can make this into a cheesy sauce by adding parmesan and/or other cheeses and even cream. You can make this into a savory & spicy sauce by adding crushed red pepper and/or other hot peppers. You can add vegetables to the sauce to make a "garden medley." And, you can even make this with vegan meat! Of course sauce will always get better the longer it simmers with the ingredients. This is made quick for dinner. However, if your heart is truly in making the sauce you can continue to simmer it for a few hours or even slow cook it in a crockpot. #pasta #pastasauce #meatsauce #spaghettisauce #pastanight #italiannight Chef Mommy Nessa -

Vegan 'Meat' Sauce for Pasta Vegan 'Meat' Sauce for Pasta
This pseudo-meat sauce pasta doesn't include animal products or sugar. Instead of using meat, you use koya tofu, which is easy to find. Prepare the minced koya tofuThe point is to carefully sauté the garlic and onion so you can take full advantage of its sweetness. The garlic burns especially easily, so if it seems like it's burning even over low heat, remove from heat. Homemade Pasta with Creamy Mushroom Sauce Homemade Pasta with Creamy Mushroom Sauce
I've been making homemade pasta for about 15 years. Since I've made it so many times, I've learned to judge the amount of the flour and water to use in the different climate and the required kneading time or resting time. It's a lot of work, but is quite delicious and I came up with a sauce that goes well with this homemade pasta too. The pasta makes for a great gift as well! It's really good if you can combine 3 or more different kinds of mushrooms. Homemade pasta takes a lot of effort to make, but once you get used to it after making many times, you will be surprised how delicious it is!The cooking liquid is a part of the seasoning so avoid draining too much of it. For 4 servings. Recipe by TetoNZ cookpad.japan -
Stuffed Shells with Ricotta and Homemade Mushroom Sauce Stuffed Shells with Ricotta and Homemade Mushroom Sauce
I’ve made this a few times for my family and they seem to love it so I thought I’d share :) This recipe is vegetarian but you can also sauté some Italian sausage, etc. into the sauce!I recommend using fire roasted tomato if using canned tomatoes. You can also use your own pre-made sauce (you’ll need about 2 cups).I also thought fresh mozzarella/Buffalo mozzarella tasted much better than regular shredded mozzarella so I recommend that in the ingredient list. Spaghetti with "Meat" Sauce Spaghetti with "Meat" Sauce
Its summertime and I wanted to make a lentil dinner. Usually I make Lentil Stew but its too hot for that. So I wanted to do something else. I found this recipe in my Forks Over Knives cookbook called Spaghetti with Lentil Ragu. This "meat" sauce is based on that recipe. The recipe calls for diced tomatoes but I chose a can of crushed tomatoes to make a sauce. I also put the lentils through a blender to make the lentils more ground meat like . Topping it with cheddar cheese really finished it off perfectly. I hope you'll like it as much as my family did. Debbie -
