Rigatoni with Vegan "Walnut Mushroom Meat" Sauce

This recipe was adapted from a recipe for #spaghettibolognese that I found on the website "WhatTheHeckDoIEatNow.com" which I have found to be a valuable resource. I always wondered how vegans made "meats" for recipes. I havent eaten pork in years. I've always been somewhat of a vegetarian my whole life already. However, Since I've recently started exploring the world of being #vegan one of the main foods that I've wanted to cut out is ground beef. Being raised Italian on a diet that consisted of alot of ground meats, being now "turned off" by them made me miss alot of traditional & regular recipes in my life. This #veganswap changed my life. Ingredients

4-6 servings
  1. 1 lbbag or box rigatoni pasta noodles (or preferred pasta)
  2. 1-2 (24 oz)jars of marinara sauce (or preferred pasta sauce)
  3. 1 lbvegan mushroom walnut meat (see recipe attached below)
  4. Ingredients for Vegan "Meat" Recipe:
  5. 2 tbspoil
  6. 1 cupwalnuts, chopped
  7. 1 (4 oz)can mushroom pieces & stems (or 6 medium whole, diced)
  8. 1small red onion, minced
  9. 1medium green onion, chopped
  10. 1medium clove garlic, minced
  11. 1/4 cupflour
  12. 2 tspsalt
  13. 2 tsppepper
  14. 1 tsponion powder
  15. 1 tbsp"Garlic & Herb" Mrs. Dash Seasoning
  16. Optional Toppings:
  17. Vegan shredded cheese
  18. Nutritional yeast
  19. Green onions, chopped
  20. Basil or Parsley, dried or chopped

Cooking Instructions

    First, Heat a large pot of water for your pasta of choice & cook as per the package directions. Drain when done & Set aside.

    Meanwhile, Prepare vegan walnut mushroom "meat" according to attached recipe in a large skillet over medium heat.

    Once meat mixture is browned throughout, Add marinara (or whatever sauce you like) to the large skillet with the "meat" mixture. Stir well to combine. Cook until heated throughout.

    Finally, Serve pasta with "meat" sauce over top & sprinkle with your favorite shredded vegan cheese or nutritional yeast. Chopped green onions, basil, or parsley make a great addition as well. Serve & Enjoy!
