Cook rice until half done. Let it cool.

Boil mushroom until soft.

Boil salted egg then separate the yolk

Prepare two leaves, stack it together. Then scoop rice and place the other ingredients in the center of rice.

Then scoop rice to cover. Then work on the leaves to cover the rice. then tie it to secure.

Steam for 30-35 mins.

I really recommend this.Add enough tofu to the rice dumplings so that they become soft like your earlobes. You can use green onions, aonori seaweed, or green peas in place of the shiso leaves, if you wish. You can add either processed cheese or melting cheese. I was thinking that it's a bother to haul out the steamer to steam shumai dumplings, so I thought of cooking in the rice cooker instead. I also thought that sweet rice shumai dumplings can't be the main carbohydrate on their own... so I tried making the rice for the meal with the dumplings, and it succeeded. We use this "two birds with one stone" recipe all the time now.You can use Chinese cabbage, regular cabbage or komatsuna greens, but Chinese cabbage is very watery so you may need to adjust the amount of water added to the cooker. Regular rice may not work, since the lettuce and shumai dumplings will become immersed in water. (I haven't tried it out though.)Try different variations of the rice and shumai dumplings and adjust the amounts of your ingredients to taste. Kozhukkattai is made by using different methods. This is a plain version with no filling inside. It's very easy to make. It can be a snack or breakfast. It's mostly made in Southern side of India. One thing you've to be careful about is, adding the water to make the dough, so that, the dough is not too loose or not too hard, just soft. I saw a comedian making dango on TV and got some hints from that and made this recipe.I thought that maybe my 2-year-old and 10-month-old year old daughter could help me making this while having fun so I put the rice in a plastic bag. This made it much easier to make the dango than grinding the rice in a mortar. By putting the rice in a plastic bag, I was able to play with my child while making the dango. My daughter helped me a little bit too.Mash the rice until they lose shape. You can also enjoy this dango coated in kinako powder or with azuki bean paste instead of mitarashi sauce.
