AAM CHICKEN RECIPE/SUMMER HOLIDAY CHICKEN / MANGO CHICKEN

This recipe is a special one and very close to my heart, this is my mother's recipe. We have this every year when the raw mangoes are in the season . We have a lot of fun memories specially from our school days with this chicken recipes. Maa named it "Aam Chicken" but we call it "Summer Holiday Chicken "😆 . I would request you all to try this at home and you will realise this is not any "Aam"(Normal) chicken recipe but a "Khas"(Extra ordinary ) one .

First we'll have to prepare the marinade.

For this you'll need a medium size raw mango,cut it into small cubes.
A handful of each Coriander and Mint leaves,12-15 Garlic cloves,2 inch Ginger,4-5 Green Chillies,1 medium size Onion cut into small cubes,1/2 Tsp Black pepper corns, 1 Tbsp Cumin Seeds, 1 Tbsp Coriander Seeds.

Grind everything well and make a fine paste.

In a mixing bowl take 700 gram Chicken,into this add the prepared paste, 3 Tbsp Curd,1 Tsp Salt (to taste), 2 Tbsp Mustard oil.

Mix everything well until each piece of chicken is covered with the marinade.
Once done cover and let the chicken marinate for 2-3 hours or for at least 30 minutes in the freezer. - 6
In a Kadhai or pan heat up 2 Tbsp Mustard oil, once the oil is hot add in 2 bay leaves,2 dried red chillies, 1/2 Tsp Cumin Seeds, 1 Cinnamon stick, 4-5 Cloves, 3-4 Green Cardamoms.
Saute everything for a minute or until aromatic.

Next add in 1 medium size Onion cut into Julianne and 1/4 Tsp Black Salt give a good mix and saute the onion until it turns light brown.

Then add 1/2 Tsp Red chilli powder and 1/4 Tsp Turmeric powder,give a good stir,cook for half a minute keeping the flame as low as possible or else the spices will burn.

Add the marinated chicken pieces give a stir cover and slow cook for 15-20 minutes. Stir the chicken in equal intervels to avoid buring of the chicken.
No need to add water at this stage as the chicken will release water. - 10
After 15-20 minutes when the chicken is almost add 1 cup hot water, mix well cover and let it cook for another 5 minutes.

Finally add in 1/2 Tsp Garam masala powder, some chopped coriander leaves, 2-3 slitted green chillies, some ginger julianne give a good mix,cover and turn off the heat.
