Homemade Cream Cheese

Homemade cream cheese tastes same as store bought. It is easier to prepare at home. Cream cheese can be used to prepare cheesecakes, dips, pasta sauce, fillings or as a spread. Homemade cream cheese is fresh and delicious and it is much cheaper than what we buy from the stores.

Mix milk and fresh cream. Start heating it in a heavy bottom pot. When it is about to boil, turn off the heat and add lemon juice. The milk will curdle and you will get cheese and whey in the pot. Strain it and rinse it with fresh water. Leave it in the strainer for 5 - 10 minutes. Save some water to use while blending the cheese if required.

Add it to a mixer jar along with salt and blend it to make a smooth paste. You can add little whey to get the right consistency if it is a bit hard. It will solidify a bit after refrigeration. So adjust the consistency accordingly.

Store it in the refrigerator for 4 - 5 days. Cream cheese can be used to make cheese cakes, dips, fillings, spread or pasta sauce.
