Traditional Mint Sauce

Here's how I make a classic British mint sauce that would typically be eaten with a roast joint of lamb, however I find it's also great in sandwiches, on eggs or stirred through buttery potatoes.
Note: I make mint sauce in small batches, as I only have a limited amount growing in my garden, however if you have more the measurements below are for each 3 large handfuls of mint, so if you have say 9 handfuls worth to make more, simply triple the amounts of the sugar, vinegar etc to match the yield of mint and taste as you go to judge the amount needed of each ingredient.

Rinse the mint off under cold water then remove the leaves from the stalks. Boil some water, add it to a bowl the blanche the mint leaves in the hot water for around 2-3 minutes. Drain off all the water then place upon kitchen towel and squeeze out any excess.

In a bowl mix together the sugar, lemon and vinegar until the sugar is completely dissolved. Chop the mint leaves really finely and add to the bowl. Mix together well. Here, if you have one you can add everything to a food processor instead and blitz well until a nice fine texture.

Season with a tiny pinch of salt and pepper to taste, mix again. Spoon into a sterilised jar. Keep in the fridge for up to 1-2 weeks.

We make something similar too. Try adding a few garlic cloves & a green chilli next time if you want to try a twist.🙂
