Instant Mini Sooji Uttapam

Sooji Uttapam is a quick breakfast recipe made with rava, spices, and veggies. It is a popular South Indian dosa variety made instantly without any grinding or fermentation. It is ideal for the morning breakfast recipe. It tastes great when served with a choice of spicy chutney but also tastes amazing by itself without any accompaniment.
Rava/Sooji is mixed with curd and water. Ginger, curry leaves, and green chili are added for flavor and taste. It is then rested for 10 minutes for sooji to absorb the moisture. Mini uttapams are made with your favorite veggie toppings. Here I have used onion, tomato and capsicum. You can use grated carrot, cabbage, panner, mushrooms and many more.

To prepare batter, mix rava, curd, water and salt. Add in crushed ginger, chopped curry leaves and green chili. Mix and keep aside for 10 minutes.

After the rest time, if the batter is too thick add water to lighten it. Batter should be thick but of pouring consistency.

In a bowl, mix together finely chopped onion, tomato and capsicum. Add in chopped coriander too.

Heat a tawa and drizzle with oil. Pour small ladle of batter to make 2/3 mini uttapam. Sprinkle on top with veg mix and drizzle with ghee. Slightly press so veggies don't come off. Let it cook for a minute. Flip and cook another side until golden brown. Remove onto a plate and prepare other mini uttapams too.

Serve Instant Mini Sooji Uttapam warm with coconut chutney.
