Shrimp and avocado pasta with lemon cream

Cook the pasta in 1% salted water.

Cut the backs off the prawns, remove the entrails and cut the avocado into large dice.
Sauté in a hot frying pan until the prawns are lightly cooked on both sides, then add the avocado and cream. - 3
When the cream has reduced slightly and thickened slightly, add the cooked pasta and lemon juice and mix well.
Add a little salt if it is not salty enough. - 4
Finish with lemon zest and pepper!
Only soak the yellow part of the lemon peel. The white part is bitter.
