If using store bought stuffing mixture I like this sage and onion one. Just use 3 tbsp of stuffing mixture to 3 tbsp of water to make a stiff paste mixture you can shape.

You can also use homemade stuffing mixture but be sure to have your ingredients chopped as fine as possible for the drumsticks as you stuff such a compact space. Here is my recipe for homemade stuffing:

Prep your chicken drumsticks ready for stuffing. See how to here:

Place in a oiled deep pan and drizzle oil on top. you can season the skin for extra crispness but remember the stuffing will have been seasoned already. bake in a preheated oven at 180c for 35 minutes until juices run clear.

Whilst the chicken is baking prepare the couscous salad. Bring 500ml of water to a boil. Wash the couscous under running water. Add to the boiling water and simmer for 8 minutes to aldente (or using the packet guidance). Remove from the heat, drain and set aside.

Quarter and dice your tomato. Add vinegar and olive oil. Season well and add roughly chopped basil leaves. Combine with the couscous.

Plate up together and enjoy.
