  • 8fresh egg noodles
  • 4fresh green onion shoots
  • 4dried shitake mushrooms, sliced
  • 4 cupsdashi broth
  • 4thin slices daikon root
  • 8thin slices fresh tuna
  • 4thinly stripped pieces of fresh leek
  • Tbsmiso
  • Tbssoy sauce
  • Tbssesame seeds
  • Tbsslivered dried seaweed
  • Cloveroasted garlic
  • Cost: 1/4 pound tuna $2, other $2, $1 per meal, two servings

    Steam sliced mushrooms, noodles, leek, daikon slices, carrot slices, seaweed, garlic, till tender in cup of water, about 4 minutes.. Remove garlic clove. Taste. Add 3 cups water, miso, dashi, soy, bring to boil. Add thin strips of fresh tuna, sprinkle with fresh chopped parsley and sesame seeds, when tuna turns white, serve with sake, kim chi and fresh bean sprouts. Enjoy.

I got certified by the University of California Master Gardener Program in 2005. I try to bring out the original flavor of ingredients, then add layers of spices, herbs and flavorings that enhance, not distort the taste.
