Paneer and Chickpea Salad is a high protein recipe and aids in weightloss as well as perfect appetizer for any meal. Ingredients

2 servings
  • 1 cupchickpeas boiled
  • 1/2 cuppaneer cut into cubes
  • 1medium onion chopped finely
  • 1tomato deseeded and sliced
  • 1cucumber peeled and cubed
  • 1/2capsicum sliced finely
  • 1green chilli chopped finely
  • 1 tbspcilantro chopped finely
  • 5-6garlic cloves minced
  • 1 tbspdry cranberries
  • 1 tbspolive or refined oil
  • 1/4 tspcumin seeds
  • Dressing :
  • 1 tbspolive oil
  • 1.5 tbsplemon juice
  • 1/2 tspblack salt
  • 1/4th tsp salt
  • 1 tspchaat masala
  • 1/2 tsproasted cumin powder
  • 1/2 tspblack pepper powder
  • 1/2 tspchilli flakes
  • 1 tsppowdered sugar or honey

Steps

    Soak chickpeas in warm water overnight or at least for 5-6 hours.Next pressure cook chickpeas with 1/2 tsp salt and 1/4 th tsp baking soda upto 5-6 whistles.Let the steam release on its own.Chickpeas should be soft but not mushy.Dry up excess water in chickpeas and set aside.Cut paneer into bite size pieces. Heat 1 tbsp oil and saute paneer cubes.

    In the remaining oil sprinkle cumin seeds.When they crackle, add the minced garlic and saute.Add chickpeas,a pinch of salt and saute. For assembling: Take a bowl and add paneer, chickpeas,cucumber,capsicum, tomato, chopped onion,finely chopped green chilli. Make the dressing by combining together oil,lemon juice,chilli flakes,chaat masala,black pepper and roasted cumin powder, powdered sugar or honey.

    Add this dressing to the salad and toss well. Serve immediately or chilled garnished with chopped cilantro,cranberries and sliced lemon.
