The potato masala recipe is easy to make hotel-style. Here I add the potato masala recipe also.
Steps

Add wheat flour, fenugreek leaves, and salt to a mixing bowl. Mix all of them well then pour the water. Begin to mix to form a stiff dough. Sprinkle more water as needed.

Make a stiff & tight dough that is not dry. It must not be soft like roti dough.

Drizzle 1tsp oil and knead tightly to just smooth. Keep this dough covered always until all the dough is used up to roll pooris.

Divide the dough 8parts gently rolling them in between your hand just to make them smooth.

Using oil for rolling keeps the deep-frying oil clear till the end. Begin to roll the poori. roll a few pooris and keep them on a plate.

Heat oil on a medium-high flame. While it heats. Check the oil is hot by dropping a poori. Do not disturb the poori comes up at least halfway to the surface. Then quickly but gently keep pressing the poori down to the oil. Poori puffs completely next turn it and fry until crisp and golden colour.

To fry the rest of the poori. Poori serves hot potato masala.

Potato masala preparation:
Rinse the potato very well then boil it in a pressure cooker or steamer. Pressure cook for 5 whistles. - 9
Cook potato until soft then drain the water and mash it.

Chopped veg set aside. Heat oil in a pan and add mustard urad dal mix, fennel seed, ginger, green chili, and curry leaves cook a few minutes then add onion and fry it well. Then add turmeric powder and boiled, mashed potatoes stir, and mix very well.

Next, add 1cup of water and salt close the lid and cook for a thicker consistency. Then open the pan and cook for a few minutes.

Finally, add chopped coriander leaves stir very well and switch off the heat. Serve it hot with poori.
