It's monsoon season, and it's just not complete without pakoras! I made bottle gourd fritters, which are tasty and healthy.

Peel and grate the bottle gourd. Place the grated bottle gourd in a mixing bowl. Add all the spices, chickpea flour, chopped green chili, chopped cilantro, and grated ginger. Mix well. (You usually don't need to add water because the bottle gourd releases its own moisture. If there's too much water, you can squeeze out some of the excess.)

Heat oil in a pan. Once the oil is slightly hot, use a spoon or your hands to drop portions of the mixture into the oil. Fry the fritters on medium heat until they are golden and crispy.
