California Farm Veg Eggplant Cheese Burger

Any leftover cheese will work with this no meat, double eggplant cheeseburger, where the breaded eggplant is stacked in multiple layers with sliced cheese, tomato, avocado, mushroom and onion in between, then broiled to perfection.

Any leftover cheese will work with this no meat, double eggplant cheeseburger, where the breaded eggplant is stacked in multiple layers with sliced cheese, tomato, avocado, mushroom and onion in between, then broiled to perfection.

Heat large cast iron skillet to medium high. Spray olive oil in skillet when hot. Slice tomato, onion, mushroom, eggplant. Sautee eggplant, onion slices till carmelized, sautee mushroom, avocado and tomato slices till soft. About 2 minutes per side.

Dip peeled eggplant slices in whipped egg mix, then dip in all purpose flour with oregano, then dip in egg again, then dip in 3 Tbs breadcrumbs mixed with Tbs parmesan cheese and sesame seeds. Put oven on low broil, stack cheeseburger on plate as follows: eggplant slice, cheese slice, tomato slice, onion slice, mushroom slice, eggplant slice, avocado slice, onion slice, tomato slice, cheese slice, eggplant slice. Broil 10 minutes, serve.
