Ingredients

Sautee 20 minutes, low broil 10 minutes
2 people, 2 burgers
  1. To make two cheese burgers:
  2. 4square slices Cheddar cheese
  3. 6 slicespeeled large purple eggplant, 1/4 inch thick (6 mm)
  4. 4 slicesfresh large heirloom tomato, 1/4 inch thick (6 mm)
  5. 4 slicesmild large onion, 1/8th inch thick (3 mm)
  6. 2 sliceslarge mushroom, 1/8th inch thick (3 mm)
  7. 2 sliceslarge avocado, 1/4 inch thick (6 mm)
  8. 2whipped fresh farm eggs with Tbs balsamic vinegar, tsp dry mustard, pinch of pepper and salt, (optional sprinkle of truffle)
  9. 3 Tbsbreadcrumbs mixed with tsp sesame seeds, Tbs parmesan cheese
  10. 3 Tbsall purpose flour mixed with Tbs oregano
  11. as neededFine mist spray of olive oil
  12. Equipment: large cast iron skillet, sharp knife or mandolin slicer, cutting board
  13. Cost: eggs 40 cents, cheese 80 cents, tomato, onion, avocado, other 80 cents, burgers $1 each

Cooking Instructions

Sautee 20 minutes, low broil 10 minutes

    Heat large cast iron skillet to medium high. Spray olive oil in skillet when hot. Slice tomato, onion, mushroom, eggplant. Sautee eggplant, onion slices till carmelized, sautee mushroom, avocado and tomato slices till soft. About 2 minutes per side.

    Dip peeled eggplant slices in whipped egg mix, then dip in all purpose flour with oregano, then dip in egg again, then dip in 3 Tbs breadcrumbs mixed with Tbs parmesan cheese and sesame seeds. Put oven on low broil, stack cheeseburger on plate as follows: eggplant slice, cheese slice, tomato slice, onion slice, mushroom slice, eggplant slice, avocado slice, onion slice, tomato slice, cheese slice, eggplant slice. Broil 10 minutes, serve.
