Maharashtrian Thecha

Maharashtrian thecha is a type of chutney that is prepared using green chilies and fresh garlic. Usually, it is prepared using mortar pestle and the texture of this chutney is coarse. In the absence of a mortar pestle, we can even grind this chutney in the mixer jar using pulse mode. This thecha tastes delicious served with bhakri, thalipeeth or paratha.

Roast groundnuts in a pan on medium heat. Let it cool down completely and remove the skin.

Heat oil in a pan and add cumin to it. When it becomes brown, add green chilies and garlic to it. Saute it on medium heat for 5 to 8 minutes. Now add coriander leaves and stalks to it and cook it on medium heat for a minute. Add groundnuts and salt to it and turn off the heat. Cool down completely.

Add everything to a mixer jar or mortar pestle and grind it coarsely. Traditionally it is crushed using a mortar pestle but you can even grind it into a coarse paste in a mixer jar using pulse mode.
