Ingredients

  1. Pork Marinade Ingredients
  2. 2 piecespork for making pork chops, as shown in the picture
  3. 1 teaspoonsalt
  4. 1/2 teaspoongarlic powder
  5. 1/4 teaspoondried rosemary
  6. 1 pinchground pepper
  7. Sauce Ingredients
  8. 15 gramsbutter
  9. 3 clovesgarlic
  10. 2 tablespoonshoney
  11. 1 tablespoonchicken bouillon powder (dissolved in water) to make 5 tablespoons
  12. 2 tablespoonsapple cider vinegar (can substitute with other vinegars)
  13. Canned pineapple rings
  14. Cilantro (for garnish)
  15. Mashed Potatoes
  16. 2large potatoes
  17. 20 gramsbutter
  18. 5 tablespoonswhole milk
  19. 2 teaspoonssalt

Cooking Instructions

    Wash the pork and pat dry.

    Mix the pork marinade ingredients in a bowl until combined, then rub onto both sides of the pork.

    Heat a pan on high heat, add olive oil, and fry the pork on high for 3 minutes. Then reduce to medium-low heat and fry for another 3 minutes on each side (while waiting, chop the garlic and prepare the mashed potatoes as described in step 9).

    After 4 minutes on each side, remove the pork and set aside.

    In the same pan on medium heat, add butter and sauté the chopped garlic for about half a minute until it starts to turn yellow (be careful not to burn it).

    On low heat, add honey, chicken broth, and apple cider vinegar. Simmer the sauce until it starts to boil, then add the pineapple rings as desired and 3 tablespoons of pineapple syrup. Let the sauce and pineapple simmer until the sauce thickens and the pineapple edges start to brown slightly.

    Return the pork to the pan and fry for 2 minutes on each side. Turn off the heat and serve.

    Peel the potatoes, cut them in half, and then into pieces. Place in a microwave-safe container, add just enough water to cover the potatoes, cover the container, and microwave on high for 15 minutes.

    Boil water in a pot and transfer the microwaved potatoes to boil for another 10 minutes.

    Once the potatoes are soft, drain the water, add butter and milk, and mash until smooth.
