Peel and chop pineapple into cubes removing the hard fibrous core inside. Puree in a blender adding 1/4 th cup water.Strain the juice and discard the fiber.

Pour the pulp in a wok. For 2 cups pulp add 1.5 cups sugar to it. Add pinch of salt to balance the sweetness. Bring it to boil and cook on medium flame till sugar is dissolved and gets thick.Dilute gelatin in water and add it to the boiling pulp.Boil till the pulp is thick and foamy.

Add pinch of yellow food colour and 2 tbsp lemon juice.Mix and give it a boil.Remove from heat and allow it to cool completely.

Pour in a clean dry glass jar and refrigerate. Enjoy with buttered toast, in sandwich or top it over biscuits,cookies and enjoy.
