Pumpkin leaves have their own flavour and texture. I simply love this Zambian style pumpkin leaves curry. It is prepared using very basic ingredients yet is so tasty that I cannot describe it properly. It is prepared using pumpkin leaves, tomatoes, salt and groundnut powder. This curry is served with nshima which is basically steamed maize flour without any spices.

  • 10tender pumpkin leaves
  • 1large tomato
  • as per requirementSalt to taste
  • 1 cupgroundnut powder
  • 4 cupswater

    Choose tender pumping leaves to make this curry. Wash the leaves 4 to 5 times in plenty of water to remove all the dirt. Devain the leaves by removing the veins with your hands as it is easier to eat the leaves without veins. Devain the stems also. Chop the stems and leaves finely.

    Heat one cup of water in a pot and add pumpkin leaves on top. Now cover the lid and let it steam on medium heat. When it starts steaming, add chopped tomato and salt on top of the leaves and cover the lid again for 5 minutes. Now add groundnut powder on top and cover the lid. Cook it for 5 more minutes on medium heat.

    Now mix everything well and add water according to your requirement. I like it soupy so I add more water. Water is completely subjective. Now let it cook for 10 more minutes on medium heat and turn off the heat.

    Serve it hot along with nshima which is an African staple dish prepared using African maize flour. I even like to have it just as a soup.
