Working sunrise till noon, then sitting down for a long summer farm luncheon break, then back to work. Hot, spicy, creamy, filling chowders work well for this. Here is my spicy summer creamed clam chowder, different from winter soups. Serve cold water, fresh bread, ripe fruits and cold salad with this chowder.

Ingredients

1 1/2 hour
2 people, 4 big meals
  • 1 Canbaby clams in clam juice, 10 oz can
  • 1 cupchopped onions
  • 3garlic cloves
  • 2 cupsdiced, unpeeled Russet potatoes
  • 1 cupchopped cured ham (see recipe)
  • 1 cupcubed firm tofu (see recipe)
  • 1 Tbslemon grass oil (see recipe)
  • 1dried bayleaf
  • 1small banana pepper, sliced in thin rings, seeds removed
  • 2 cupsdairy or coconut cream
  • 2 slicespickled habanero pepper (see recipe)
  • BottleHabanero pepper sauce on the side (see recipe)
  • Equipment: dutch oven with lid, cast iron sauce pan
  • Cost: clams $6, ham $1, tofu $1, cream $1, per meal $3

Steps

1 1/2 hour
  1. 1

    Medium heat Tbs lemon grass oil in dutch oven or wok, brown habanero strips, (or 2 tsp red pepper flakes), diced ham, tofu, glaze onion and garlic, stir, till ham fat is melted and other ingredients are done, about 45 minutes.

    Mix with boiled (1/2 hour) unpeeled diced potatoes, clam juice, cream, bay leaf, mash with potato masher, bring to boil and thicken while stirring, then slow boil with lid on, half hour.

    Just before serving, add canned clams, stir till heated, not boiled, garnish with fresh banana pepper rings, sprinkle with chopped fresh parsley.

    Serve with fresh bread, fruits, salad. Add more spice with drops of habanero pepper sauce if desired.
