Chop the chocolate into small pieces and melt it using a double boiler or in the microwave.

Separate the egg yolks from the whites.

Remove the chocolate from the heat and stir in the egg yolks. Set aside.

Place the egg whites in a mixing bowl, add the pinch of salt, and beat with an electric mixer until stiff peaks form.

Gently fold the beaten egg whites into the melted chocolate in three additions, lifting from the bottom to the top each time.

Spoon the chocolate mousse into cups, ramekins, or small glasses, and chill in the refrigerator for at least 3 hours, preferably overnight.

Top the chocolate mousse with mini chocolate bars if desired.
